Modern kayaks are typically low volume with flat surfaces that make the boat more responsive.
   

Fitting the kayak to the paddler is key. Often kayakers use high density, closed cell foam to custom fit their boat.

Adjust the bulkhead (foot brace) so that the balls of your feet can press against the bulkhead while your thighs press against the thigh braces. You should feel like you can wedge yourself in by pressing against the bulkhead. Remember, though, that it should be easy to get out.

Paddles come in various styles and prices range widely.

The paddle pictured here has an 80 degree index (notice that the blades are offset), the blades are asymmetrical and curved. This paddle is made of fiberglass and graphite so it's nice and light. This is a good all around river kayak paddle design
