Cimarron taps into beer sales

Students will soon be able to purchase beer at another campus restaurant now that Cimarron Cafe and Grill is in the final stages of acquiring a liquor license.

Owners Andrew and Eva Esparza applied for the liquor license June 6 and were granted one on Aug. 6.
They are now making plans to begin selling beer and wine early next semester.

Eva Esparza said that between the addition of equipment and training employees on alcohol sales, it should be around January that they make the additions to the menu.

"We're going to move things around, but nothing that a regular customer would notice," Eva Esparza said. "We will make sure there is still the same environment."

The Esparza's are very familiar with the process of gaining a liquor license. They also own a concession stand at the Fitzsimmons Golf Course.

Joining the Tivoli lineup of eateries in January 2007, the cafe has a quiet study environment and has a full breakfast and lunch menu.

Manager Gabriel Mateos emphasized the safety priorities Cimarron Cafe will have. Vendors have already provided "don't drink and drive" and "no one under 21" signs to promote responsible drinking.

"We are going to card everybody," Mateos said. "We will be very strict about it."

Metro senior Aaron Stafford hadn't heard of the Cimarron Cafe but said that with the sale of beer he may find himself there eventually.

"I enjoy a beer in the afternoon sometimes at Pete's," Stafford said. "So I guess if this place starts selling it too, I'll have to check it out."

Just catty-corner to the cafe, Pete's Arena is the currently the only establishment on campus to sell alcoholic beverages. In anticipation of the new competition, they have been checking their books and planning ahead for adjustments.

As a retail specialist for Sodexo, the corporate owner of Pete's, Metro sophomore Dave Aguado said that if sales drop, prices would have to increase to make up for the difference.

"If profits decrease by six percent, we must increase the price (per beer) by 30 cents," Aguado said. Pete's is also planning to set up promotional activities next semester such as a barbecue in the spring.

Eva Esparza said she has also been considering the competition.

Though her other establishment sells primarily Coors and Budweiser products, she is willing to pick up some other vendors that Pete's does not provide.

Student feedback and suggestions will also be looked at and taken into consideration, Eva Esparza said.
